Sea Bass Fillet

Sea Bass is a wonderful fish and works well both as a sophisticated dinner party dish or as a simple delicious supper as in our featured recipe of the month.

Sea Bass can be baked, grilled or pan-fried. It has white flesh with large, tender flakes of fleshy meat.. Sea Bass has a fabulous taste and thanks to its high fat content it keeps moist during cooking and gives it a rich, tender flavour profile which melts in your mouth.

Television and celebrity chefs cannot stop praising the flavour of sea bass which has contributed to sales having powered ahead year after year in the UK. The latest figures from Seafish, the marine fishing authority, show that sales of sea bass have more than trebled since 2005, jumping from £7m to £22m today.

Sea bass and Chablis is a great match. Try this beautiful Petit Chablis on offer from Waitrose at £9.59 per bottle. This world-famous white wine comes from vineyards around the town of Chablis in the northernmost region of Burgundy. Made entirely from the traditional chardonnay grape variety, it is made in an approachable style. The wine is dry, with fresh acidity and good depth of fruit flavour.
